Macaroni and Cheese

Great, versatile recipe for delicious homemade mac and cheese. Feel free to keep it basic or add anything else you can think of: crispy bacon, corned beef and sauerkraut (seriously, it's fantastic), shrimp and lobster, whatever you want.

  • Start a large pot of water to boil for the noodles.
  • Preheat oven to 375° F.
  • Line a large baking pan with butter.
  • In a skillet, melt butter and cook onion for a few minutes until soft.
  • Add more butter if necessary and stir in flour.
  • Start adding milk/cream and stirring often to form a thick bechamel.
  • When pot of water is boiling, add noodles and cook, stirring occasionally to stop sticking, until almost done.
  • Grate cheeses into a bowl. You should have at least 3-4 cups of cheese.
  • Start stirring cheese into bechamel, stirring often so the cheese melts.
  • Drain pasta when nearly cooked.
  • In a large bowl, combine cooked macaroni, cheese sauce and anything else you want to add.
  • Pour into baking pan and bake for 20 minutes.
  • Broil the pan for the last minute or two to brown the top.
