Pizza Dough

Easy, reliable recipe for great pizza. You can make either the quick version in 2 hours or the overnight version, which tastes better.

  • Mix warm water, yeast and sugar in a large bowl and stir to dissolve.
  • Let rest for 10 minutes.
  • In another bowl, mix flour and salt.
  • Stir flour into water and mix to combine. Add 1 Tbsp oil.
  • Knead for 10 minutes until dough is smooth and elastic.
  • Rub 1 Tbsp oil all over dough and place it in a bowl.
  • If you are making the quick version, cover the bowl with a cloth and let it sit on a counter for two hours. For the tastier, slower version, cover the bowl in plastic wrap and refrigerate overnight. (Remove from fridge 1 hour before using to let the dough warm up.)
  • This recipe will make two medium-sized pizzas or one "party sized" pizza. If making two smaller pizzas, place the dough on a floured cutting board and slice the dough in two with a floured chef's knife.
  • Spread cornmeal or flour on a baking sheet and lay the dough on the sheet. Gently stretch the dough, starting from the edge and working toward the centre, until it is as large and thin as you want.
  • Top with your choice of pizza toppings and bake.
