Butter Chicken

Indian restaurant-style butter chicken.

  • Cut chicken into 1 inch cubes.
  • Toss in a large bowl with salt, garam masala, lemon and oil.
  • Heat oil and butter in a hot, heavy skillet.
  • Brown chicken in batches and set aside.
  • Reduce heat to medium low and sweat onion for 5 minutes.
  • Add ginger and garlic and stir together for a minute or two.
  • Add spices and more lemon and stir together for a minute or two.
  • Add tomatoes, cream and ketchup and stir together.
  • Add chicken and any accumulated juices and cook on medium-low until chicken is cooked through and tender.
  • Serve with rice and naan bread.
