Chicken Parmigiana

Classic hearty Italian baked dinner.

  • Season chicken breasts with salt and pepper.
  • Place a sheet of wax or parchment paper on a cutting board, then lay down the chicken breasts, then lay another sheet of wax or parchment paper on top.
  • Pound the chicken breasts to a uniform thickness of around half an inch.
  • Prepare the breading in three wide, shallow bowls. In the first bowl, combine flour with salt, pepper and paprika. In the second bowl, beat eggs with a little bit of water. In the third bowl, place the breadcrumbs.
  • Heat a large, heavy skillet on medium heat.
  • Dredge each chicken breast through the flour, the egg and the breadcrumbs.
  • Fry the chicken breasts in olive oil for several minutes on each side until cooked through.
  • Preheat oven to 375F. In a baking dish, place a layer of hot tomato sauce, then the fried chicken pieces, and then more hot tomato sauce.
  • Top with grated mozzarella cheese and bake for around 30 minutes or until cheese is golden brown and sauce is bubbling.
