Grilled Shrimp Linguine

Adapted from a recipe for grilled shrimp by Mark McEwan

Instructions

  • Put a large pot of water on the stove to boil.
  • Heat griddle to medium-high heat.
  • Slice lemons in half and grill until well-browned, then set aside.
  • Peel shrimp and toss with warmed clarified butter and seasoning.
  • When water comes to a boil, cook linguine until al dente and drain thoroughly.
  • Grill shrimp on the griddle, turning once and removing once they're pink.
  • Put the shrimp, garlic, peppers and butter into a large bowl and season. Squeeze in two of the lemon halves and toss vigorously until emulsified.
  • Toss in the linguine and fresh herbs and stir until mixed.
  • Serve in a platter with the other two lemon halves and garnish with grated Parmiggiano.
