Pancakes, Vegan Oat Buttermilk

A vegan version of the oat buttermilk pancakes.

  • Melt the plant butter in a stove on low heat.
  • Beat together the milk, butter and eggs in a bowl, then stir in the vinegar and vanilla.
  • Stir in the oats.
  • In a separate bowl, combine the flour, baking powder, baking soda and salt.
  • Stir the flour mixture into the liquid until they are combined - but don’t over-stir.
  • Heat a pan on medium heat. Add some plant butter or vegetable oil and fry the pancakes in batches, turning once when the first side is browned.
  • Serve with maple syrup and stewed fruit.
