Ingredients

• 5 oz or 150 g flour (about 1 cup if you don't have a scale)
• salt
• 4 eggs
• 1 scant cup (120 ml) milk
• vegetable oil

Instructions

• Stir together flour and salt. Beat in eggs until smooth. Add milk and stir until combined. Pour mix into a jug with a spout for pouring.
• Pour some oil into 12 small muffin tins.
• Preheat to 425 F and put the tins in the oven.
• When oven is thoroughly hot, pull out the tins.
• Quickly pour in the mix and place them back into the oven.
• Cook for 20-25 minutes or until puffed up and cooked through.
• Don't open the oven door until they're done.
