Irish Potato Stuffing

Classic turkey stuffing with potatoes, adapted from an old family recipe. I prefer to use fresh sage, as the flavour is milder but brighter.

Ingredients

3-4 potatoes
2 onions, julienned
1 carrot, diced (optional)
1 celery stalk, diced (optional)
1 loaf dense multi-grain bread
lots of butter or vegan butter
2 cups chicken or vegetable stock
salt and pepper
Bunch of sage (fresh tastes brighter whereas dried tastes sharper)
