Irish Potato Stuffing
Classic turkey stuffing with potatoes, adapted from an old family recipe. I prefer to use fresh sage, as the flavour is milder but brighter.

- Preheat oven to 400° F.
- Chop the potatoes into smallish cubes (I don’t bother to peel them) and parboil on salted water until almost cooked.
- Slice the onions and other aromatics and place in a large bowl.
- Add the potatoes and stir to combine.
- Tear the loaf by hand into small pieces and add them to the bowl.
- Slice the sage (if using fresh) and add to the bowl. Season liberally with salt and pepper.
- Cut in as much butter as your conscience allows and stir to combine.
- Stir in the stock, a bit at a time, until the mix is pretty wet but liquid is not pooling in the bottom.
- Transfer the mix into a large buttered baking pan.
- Bake uncovered for an hour or so until cooked and browning nicely on top.
