Irish Soda Bread
My take on traditional Irish soda bread, adapted from my mother’s recipe.

- Preheat oven to 375°F and place a large heavy skillet, eg. cast iron, into it to heat up.
- Combine flour, baking powder, baking soda and salt in a large bowl.
- Cut butter into mixture.
- Add buttermilk and stir until it’s just combined. Don’t overmix and don’t knead.
- Take the heavy skillet out of the oven and add a pat of butter to melt in the bottom.
- Form the dough gently into a flattened ball and place it into the skillet.
- Cut a cross 2 cm deep into the top of the dough.
- Bake for 40 minutes, then remove and let cool on a wire rack.
