Baked Haddock
Breaded and baked to perfection

Ingredients
Panko or breadcrumbs or crumbled crackers
Minced fresh parsley
Grated parmigiana
Zest of 1 lemon
Salt and pepper
Smoked paprika
Onion powder
Garlic powder
Melted butter
Olive oil
3-4 haddock fillets
Instructions
Preheat oven to 400°F.
In a bowl, combine the breadcrumbs, zest, parsley, grated cheese, spices, seasonings, melted butter and olive oil.
Rub the fillets with olive oil and place in a glass pan.
Crumble the breading on top and pat gently in place.
Bake for 20 minutes or until cooked and flaky.
Serve with the zested lemon cut into slices.
