Ribs
Delicious, tender braised and barbecued ribs.

Ingredients
2 racks of back ribs
2 tall cans of beer or 1 bottle of white wine
1 onion, julienned
2 large or 3 small carrots, chopped
2-3 stalks of celery, chopped
4 cloves of garlic, sliced
Salt and pepper
2-3 servings of barbecue sauce

Instructions
wash and dry ribs and season with salt and pepper.
Leave them out of the fridge for an hour to warm up.
Preheat oven to 250° F.
Place ribs into a large baking pan.
Pour beer/wine over ribs so they are half-covered in liquid.
Add onion, carrots, celery and garlic.
Bake for 3 hours, basting from time to time and turning a couple of times.
Fire up the grill on medium heat.
Place ribs on the grill and coat the top side with barbecue sauce.
Grill, covered, for a couple of minutes.
Turn ribs over, coat the other side and cover again.
Do this 6-8 times until ribs are well-coated with a thick layer of barbecue sauce.
