Beef or Chicken Vermicelli Bowl

- Mix garlic, fish sauce and peanut sauce in a large bowl.
- Tenderize beef or Chicken and cut against grain into thin strip.
- Stir meat into bowl and cover with sauce to marinade.
- Heat oil in a heavy pan and sauteed shallots until brown and crispy. Set aside.
- Bring a large pot of water to a boil. Add vermicelli and cook according to package directions, probably for 1-3 minutes. Drain and set aside.
- Mix chopped vegetables in a bowl.
- Heat pan again under medium-high heat and cook meat, stirring occasionally, until cooked.
- Run vermicelli under hot water to soften.
- Into each bowl, add vermicelli, vegetables, meat, peanuts, bean sprouts, shallots and dipping sauce and enjoy.
