Beef or Chicken Vermicelli Bowl
Easy, delicious and fresh tasting dish.

Ingredients
2 lb chicken breast or steak
5 cloves garlic, mashed
4 Tbsp fish sauce
If chicken, 1/3 cup peanut sauce
1 package vermicelli
1 head lettuce, shredded
1 carrot, grated
1/2 cucumber, julienned
1 red pepper, julienned
1 bunch green onions, diced
1/2 cup cilantro, chopped
3 Tbsp basil, chopped
3 Tbsp mint, chopped
1 cup bean sprouts
Vegetable oil
5 shallots
Dipping sauce

Instructions
Mix garlic, fish sauce and peanut sauce in a large bowl.
Tenderize beef or Chicken and cut against grain into thin strip.
Stir meat into bowl and cover with sauce to marinade.
Heat oil in a heavy pan and sauteed shallots until brown and crispy. Set aside.
Bring a large pot of water to a boil. Add vermicelli and cook according to package directions, probably for 1-3 minutes. Drain and set aside.
Mix chopped vegetables in a bowl.
Heat pan again under medium-high heat and cook meat, stirring occasionally, until cooked.
Run vermicelli under hot water to soften.
Into each bowl, add vermicelli, vegetables, meat, peanuts, bean sprouts, shallots and dipping sauce and enjoy.
