Guacamole
Simple, delicious avocado dip.

- Finely mince the onion and place into a small bowl.
- Squeeze the lime juice over the onion, add the salt and pepper and stir to combine. Leave it to rest and macerate for at least half an hour.
- Slice the avocados in half and scoop the insides into a medium-sized bowl.
- Stir in the macerated onions and mash coarsely with a fork until combined but not pureed.
- Serve with nachos, warmed pita, rice crackers or sliced vegetables.
