Butter Chicken
Indian restaurant-style butter chicken.

- Cut chicken into 1 inch cubes.
- Toss in a large bowl with salt, garam masala, lemon and oil.
- Heat oil and butter in a hot, heavy skillet.
- Brown chicken in batches and set aside.
- Reduce heat to medium low and sweat onion for 5 minutes.
- Add ginger and garlic and stir together for a minute or two.
- Add spices and more lemon and stir together for a minute or two.
- Add tomatoes, cream and ketchup and stir together.
- Add chicken and any accumulated juices and cook on medium-low until chicken is cooked through and tender.
- Serve with rice and naan bread.
