Chicken Parmigiana
Classic hearty Italian baked dinner.

- Season chicken breasts with salt and pepper.
- Place a sheet of wax or parchment paper on a cutting board, then lay down the chicken breasts, then lay another sheet of wax or parchment paper on top.
- Pound the chicken breasts to a uniform thickness of around half an inch.
- Prepare the breading in three wide, shallow bowls. In the first bowl, combine flour with salt, pepper and paprika. In the second bowl, beat eggs with a little bit of water. In the third bowl, place the breadcrumbs.
- Heat a large, heavy skillet on medium heat.
- Dredge each chicken breast through the flour, the egg and the breadcrumbs.
- Fry the chicken breasts in olive oil for several minutes on each side until cooked through.
- Preheat oven to 375F. In a baking dish, place a layer of hot tomato sauce, then the fried chicken pieces, and then more hot tomato sauce.
- Top with grated mozzarella cheese and bake for around 30 minutes or until cheese is golden brown and sauce is bubbling.
