Mayonnaise
Mayonnaise is an emulsion of lemon juice and vegetable oil, held together with egg yolk. It is easy to make and way more delicious than the store-bought variety.

- In a stainless steel bowl, whisk together the egg yolk, lemon juice, mustard and seasoning.
- Start to pour the vegetable oil into the bowl *VERY SLOWLY*, just a drop at a time, whisking continuously while you pour. It is very important to add the oil extremely slowly, especially at the start, or else the oil will overwhelm the emulsion and won't incorporate.
- Once around half the oil has been added, it is safe to pour just a little bit faster - but always err on the side of going slow.
