Falafels
Falafels are delicious and surprisingly easy to make.

Ingredients
1 can of chick peas, drained
1 onion, diced
2 cloves of garlic, minced
1 lemon, juiced
1/3 cup fresh flat leaf parsley, chopped
1 Tbsp cumin
1 tsp smoked paprika
1/2 tsp cayenne (or more if you like it hotter)
Salt and pepper
1/2 cup flour
2 tsp baking sofa
Olive oil for cooking
Pita
Tahini Sauce
<
Lettuce
Tomato
Red onion
Pickles
Instructions
Preheat oven to 375° F.
Combine the chick peas, onions, garlic, lemon juice, parsley, spices and seasoning in a bowl.
Pulse with a food processor or immersion blender until coarsely mixed (chick peas should be broken up but you don’t want a smooth paste).
On a separate bowl, combine flour and baking sofa.
Stir flour mixture into falafel mixture.
Pour olive oil onto a large glass baking dish. Using two spoons, spoon the falafel mix out in dollops around 1 inch in diameter with a bit of space between them.
Bake for 10-20 minutes until browned nicely.
Serve on warmed falafels with tahini sauce, lettuce, tomato, onion, pickle and any other toppings you want.
